I have been writing weekly meal plans for a long time, and thought it would be fun to share with others who are looking for inspiration! All of the meals that I cook are simple, include vegetables, and are mostly gluten and lactose free. We have been moving towards a more “flexitarian” diet in the past year or so, and if we are eating meat, it usually a smaller portion or on the side. I’m also always looking for meals that can be easily prepped ahead of time, and don’t create a huge mess to clean up after dinner. Finally, everything I cook is served to my kids, so I go light on spicy foods, and always make sure there is something that I know they like to eat on the table.
